Elderflower

Combine some fragrant elderflowers, sugar and a bit of lemon juice, and voilà – you’ve made an old traditional Slovenian beverage called ‘šabesa’, or elderflower cordial, just like our grandmothers used to make. Surrounded by the indigenous Slovene apple variety ‘bobovec’, we have substituted the lemon with apple juice, which is rich in vitamin C, to create a refreshing fruit beverage we’ve named Šebesa. Did you know that elder was considered a cure-all by our ancestors due to its detoxifying effect? They used to believe that elder trees were home to spirits who protected people, ensuring their well-being and safety. Elder was supposed to drive away not only pests such as thieves but also witches and negative energy. Elderflowers are still a regular feature at weddings, as they are supposed to act as an amulet that protects the newly-weds. Mix it up and try it ;) Not only can the syrup be mixed into a refreshing beverage, but you can also use it as a topping for desserts, ice cream and fruit salads or to add some extra flavour to your favourite cocktail.
